Oh boy! Kristin to the rescue! Heidi and I were feeling low, craving chocolate and ice cream.
I was fighting off the cravings by telling myself that we couldn't eat the stuff if I didn't get in the car and go. :P So I kept trying to convince myself I didn't want to go out ... no, not for delicious ice cream, so cool, so tasty, so ... yeah, right! Then Kristin came in and asked if it would be okay if she made caramel apple cake. And I said sure.
Kristin's made this tasty dessert before. In fact, she really should put it into 'Favorite Recipes'. It's low fat and is good for diabetics because you use Splenda instead of sugar. She cut up a couple of apples, added nutmeg, the cake batter and then put it into the oven. She made homemade caramel to drizzle over the cake when it cooled ... but it never got the chance. Yes, folks, we ate the whole thing before it was cool. And it was delicious!
