Only in a small town and squishy eggs!
This morning I was going to make breakfast for the family. Everyone wanted squishy eggs on toast except Heidi. (Squishy eggs are Kristin's description of soft boiled eggs and the name stuck) The easiest way to make them consistently is to bring some water (enough to cover the eggs) to a boil and then gently add the eggs, set the timer to 6 minutes leaving the heat on high, and when the time is up, quickly run them under cold water and serve. They are easy to peel like a hard boiled egg, the white is cooked through, but the yolk is runny. I like to pop em in my mouth and let the yolk explode. Yum! We usually serve them with toast, a little spray margarine, salt and pepper
Anyway, just as I was going to make breakfast I noticed we didn't have enough eggs. I yelled to Cassie that I was going to run to Wawa and get some, then out the door I went. I got to Wawa and it was crowded. There was a long line at each register. I grabbed some eggs and half a dozen buttered rolls and waited in line. Eventually I got to the register, paid and left the store. I followed a pickup truck out of the parking lot when all of a sudden the truck slammed on his brakes! What now I wondered.
Right in front of the truck a woman in a small car driving along spied a pile of trash sitting in front of someones house. She slammed on her brakes in the middle of the street. No one could get by in either direction. Calmly got out of her car and walked over to the trash pile, picked up a lamp someone was throwing away, then put it back down and went back around to her car, got in and drove away. She walked as if she were just out for a stroll, not a care in the world. Completely oblivious to every one and everything around her.
Isn't small town life great?

Hi Ted and family!! Our family calls those eggs "dippin eggs" thanks to Alex when he was a toddler. He loved to dip his toast in the yolk. I'm actually not a fan of the runny yolk, reminds me too much of snot and even as a nurse,I struggle with that. LOL
Anyway, I'm taking a trip to Lubbock TX to see the Shorters and Bro. Hammett from PA today!!! It's been almost two years since I've seen them!! We're so excited!
